Quinoa in Herby Pesto

ImageThis little beauty is simply Quinoa in coriander and parsley pesto with sweet garden peas.

Protein overload! Don’t panic though,  it’s plant based 🙂 eat up.

pesto:  handful fresh coriander, 1 handful fresh parsley.  Put in a blender with a little rapeseed oil, rock salt, garlic granules and lemon juice. Whizz until you have pesto.

The great thing about raw pesto is that the herbs are so cleansing. Fantastic for liver health and blood health.
