Gluten free blueberry cherry muffins? With raw strawberry chia jam? 🍓 😍💕 soft and light and fluffy? Oh yes 😆 this happened 🙊 these are also egg, sugar and dairy free too.
3 cups gluten free flour
1 cup ground almonds
3 tsp Truvia
3 tsp vanilla extract
3 tsp baking powder
1/2 cup fresh blueberries
1/2 cup defrosted cherries plus juice (probably a tbsp or two)
1 cup almond milk
Add warm water slowly until you have a very thick batter 🌻🌼🌻🌼🌻🌼 Put dry ingredients in a bowl. Mix together. Add all of the wet ingredients. I mixed through the cherries last to get a marbled effect.
Fill muffin cups (I use flexi moulds) to the top, gluten free flour doesn’t rise as well as normal flour. Bake at 200 degrees for 30 minutes.
These are not Mr. Kipling sweet. When you’ve weaned yourself off sugar you just won’t the enjoy that level of sweetness. May seem unbelievable but it’s true. Your taste buds will become accustomed to natural sweetness over processed sugar. Go back to the source 🙂
