Cake, and #rawcake at that! Super easy, super healthy.
1 cup almonds – whizz in food processor
1 cup coconut flour
1 cup dates
2 tbsp raw cacao
1 tbsp coconut oil
Water to bind, only if needed!
Blend and push into a lined cake tin.
2 cups mixed berries (I used forest fruits)
4 tbsp chip seeds
3 tsp Truvia (forest fruits are tart so other berries may need less)
1 tsp vanilla extract
3 tbsp dessicated coconut
Blend. Allow the chia seeds to do their thing for 15 mins then chill in the freezer for 1 hour.
