Fig & Walnut Muffinis

So I made an amazing fig and walnut butter the other day but could I get a decent picture of it? Nope. So I’ve basically incorporated it into some muffins.  Or muffinis (just because I made the batter too thick. Oops).

They turned out pretty well really, probably need to perfect the recipe a bit but not bad for an hours messing around in the kitchen. They taste great, they’re vegan (so they’ll be morally acceptable but also great for dairy allergy sufferers and the health conscious.  Everyone’s a winner)   😉


10 dried figs (if they’re a bit firm soak for 20 mins)

1 tbsp peanut butter

1 handful of walnuts

1 cup dairy free milk

1/4 cup coconut oil

1/2 cup wholemeal flour or spelt flour

1 banana

1 tsp vanilla essence

1 tsp baking soda

Preheat oven to 180. In a food processor,  blend the figs, vanilla, banana and milk until smooth. Add the other ingredients and pulse until combined. The mix should be thick but still pourable.

Fill muffin cups and bake for approx 25 mins until golden and dry inside. 😚💛💜💞💟
